It’s Friday y’all!! Whoooooo! Time for another peek inside my lunch box…
Morning Snack: A heaping mound of fresh watermelon. Lunch: Veggie Ezekiel Pita Pizza – Topped with organic pizza sauce, 1/4 cup black beans, peppers, onions, spinach, Daiya Mozza Shreds, fresh basil and nutritional yeast.Afternoon Snack: Protein Plantain Bread with 1 Tbsp natural peanut butter. I’ve posted this plantain bread before; it’s super easy to make. Simply blend 2 ripe (almost black) plantains, 2 whole eggs, 1 scoop of protein powder and a bit of water to thin it out. Pour into 8 x 8 inch baking dish and bake at 375F for about 30 minutes. Serves 4.Don’t forget to drink your water!
